6 medium irish potatoes, peeled and quartered
1 medium yellow onion, diced
1 10 oz package philadelphia cream cheese
1 1/2 cloved garlic, diced
1/2 small package green bell pepper
1/2 small package diced celery
30 oz chicken stock
garnishes: shredded cheese to top and bacon crisp bits
